Cashew Macadamia Burgers

Several years ago I came across a recipe for Macadamia Burgers somewhere. It had many ingredients in it I don't eat, but it intrigued me. I took some time and played around with the foundation and created a new recipe that I thought better suited me. In part, I swapped out some of the macadamia nuts for cashews because where I live macadamia nuts are very expensive. Macadamia also contain considerably more fat than cashews. This recipe is still expensive and a little heavier on fat that I typically like, but it is tasty. I make it as an occasional indulgence, both financially and health-wise. I prefer it with sweet potato fries made in the air fryer over regular fries.


Macadamia Cashew Burgers
 
¾ cup macadamia nuts¾ cup cashews
1 medium carrot
1 small onion
2 garlic cloves
1 jalapeno pepper
1 ½ cups chickpea flour
2 tablespoons fresh cilantro
1 teaspoon ground cumin
½ teaspoon ground coriander
¼ teaspoon ground black pepper
1-2 limes
 



Grate carrot. Chop onion. Remove membrane and seeds from jalapeno. Mince garlic, jalapeno, and cilantro.
 
Combine the macadamia nuts, cashews, carrot, onion, garlic, jalapeno, chickpea flour, cilantro, cumin, coriander, and black pepper to a food processor. 








Process until well mixed. Add juice from one lime and process until well blended.
If mixture is too dry, add juice from second lime. Mixture will be very thick.
 



Shape patties into 4-8 equal-sized patties.*
 
Heat an iron skillet. Add patties. Cook until golden brown on bottom. Flip and cook until second side browns. About 10-12 minutes total
 
Alternatively, these can be baked. If you choose to bake them, preheat the oven to 350 degrees. Line a baking sheet with parchment paper or a silicon baking mat. Bake for 6-8 minutes, flip and bake another 6-8 minutes until brown on both sides.
 
Serve.**


* The original recipe I found called for 4 patties, but they were very large. This is flexible depending how they're being served as well as the size of the buns.

** I think this recipe is very well accompanied by tomato slices. They just seem to complete the flavor profile, but I suppose that might be a matter of personal taste.
