Raw Cinnamon Applesauce

Image
As I said, this week I'm doing a 2-for-1 in the recipe department. I shared my basic Raw Applesauce recipe, and this is my Raw Cinnamon Applesauce Recipe. They're both very easy and can be made with a few apples or a blender full of apples. Just adjust the cinnamon accordingly. Raw Cinnamon Applesauce Apples 2 teaspoons cinnamon for every 8 cups of apples Wash apples. Core and slice into pieces cutting out any bad spots. Sprinkle cinnamon over apples and mix to coat. Fill blender with apples. Slowly increase speed on blender until blending on high. Blend until smooth pushing apples down when necessary. Place in airtight containers and place in the refrigerator.  Can be frozen for longer storage if necessary.

Raw Applesauce

This week I'm sharing two very similar recipes Raw Applesauce and Raw Cinnamon Applesauce . They weren't my planned recipes, but when I discovered enough apples on our apple tree, I decided to go ahead and make applesauce and share the recipes. This is a basic raw applesauce. I don't specify the number of apples because I've made this recipe with as few as 2 apples when I needed applesauce for a recipe I was making or a full blender full of apples like this time. Raw Applesauce   Apples Wash apples. Core and slice into pieces cutting out any bad spots. Fill blender with apples. Slowly increase speed on blender until blending on high. Blend until smooth pushing apples down when necessary. Place in airtight containers and place in the refrigerator.  Can be frozen for longer storage if necessary.

Marinara Lentil Pasta in One Pot

Image
I make  Marinara Lentil Pasta in One Pot  so often I hadn't realized I hadn't written the recipe down until I decided to post it this week. I went in search of the recipe, and it wasn't in my recipe files! This is a quick, easy to make recipe that is filling and comforting. It's delicious by itself or with a salad . I love cooking pasta right in the pan both with the other ingredients without pre-boiling it for the convenience and the flavor. On top of that, you don't end up with a full pot of water to either throw away or repurpose! Marinara Lentil Pasta in One Pot 1 tablespoon ground flaxseeds 1 jar marinara sauce * 2 cups vegetable stock * 1 tablespoon dried basil 1 teaspoon dried marjoram 1 teaspoon dried parsley 1 teaspoon dried oregano 1 cup brown lentils ½-1 cup red wine (optional) 4 ounces vegan friendly pasta ** ¼ cup nutritional yeast Fresh basil (optional) Rinse lentils and set aside. Add enough water t...

Sesame Three Cabbage Tomato Salad

Image
I developed Sesame Three Cabbage Tomato Salad when I had some green cabbage I wanted to use before it went bad. Green cabbage isn't my favorite, but it came in that week's CSA box. I decided to pair it with some cabbages I like better. I eventually decided to substitute savoy cabbage for the green cabbage because I like savoy cabbage better.  Sesame Three Cabbage Tomato Salad holds up well, so it's good to take to a potluck. It also makes a wonderful accompaniment to my Miso Shiitake Soup as well as many other entrees. You could even eat is as an entree when a light but filling meal, lunch or dinner, is desired Sesame Three Cabbage Tomato Salad 4 leaves red cabbage* 4 leaves savoy cabbage 4 leaves napa cabbage 1 large tomato 1 orange 2 tablespoons balsamic vinegar 2 tablespoons sesame seeds 2 tablespoon nutritional yeast 1 teaspoon dill weed Chop cabbage and place in large serving bowl . Cut tomato into ½ inch cubes. Place in bowl with cabb...

Strawberry Muffins

Image
This recipe grew out of an attempt to make a cupcake recipe using a strawberry stout I found at the grocery store; however, the strawberry flavor in the stout was negligible and the stout, frankly, didn't taste all that good - I ended up using it on my hair, but that's a different story for a different day. So after several attempts, I ended up with this muffin recipe.  I find it fun to play with the ingredients until I get a recipe that works.  I am most appreciative to Kate, Ben, and Loay for tasting  various versions of this muffin  and giving me honest, constructive, and kind feedback on its evolutionary path! Strawberry Muffins 1 pint very ripe fresh strawberries* 2 Tbs flaxseeds 2 Tbs hot water 2 cups spelt flour 1 tsp baking soda 1 tsp baking powder ½ cup cashew milk ** ½ cup maple syrup ½ cup cashew pulp*** 1 cup dried strawberries**** Preheat oven to 350 degrees. Line a muffin pan with muffin tin liners . ...
