Whole Wheat Blueberry Muffins

Blueberry muffins make for a wonderful breakfast, a great snack, or even a healthy dessert. This is the most basic blueberry muffins I make. I often make varieties of blueberry muffins, particularly with different spice combinations. Sometimes, though, it's nice to keep things simple.  Whole Wheat Blueberry Muffins 1 cup nut milk 1 tablespoon ground flaxseeds 1 tablespoon hot water 2 cups whole wheat flour 2 teaspoons baking powder ¼ teaspoon baking soda ½ cup maple syrup 2 teaspoons vanilla extract 1 cup blueberries Preheat oven to 350 degrees.   Line a 12-cup muffin pan with unbleached compostable muffin paper muffin cups or silicone liners. Mix together flaxseeds and hot water in a small bowl. Set aside to thicken. In a small bowl, mix together nut milk, maple syrup, and vanilla. Whisk in flax seed mixture. Spicy Apple Cider Muffins

This recipe came out of one of those moments when I wanted muffins and realized I didn't have enough plant-based milk left to make it. I did however have some apple cider in the refrigerator. So... I thought for a few minutes and decided let's see what happens. I made the muffins and rather liked the end result. I'm sure these aren't quite as healthy as some other muffins I've made, but they taste quite good. I woke up craving pumpkin muffins this morning, so I decided they would be this week's recipe. I usually prefer to make the recipe for the blog earlier in the week, but this week hasn't been conducive to that. So here we are. I couldn't find the previous pumpkin muffin recipe I wrote, so I rewrote it this morning and made them. I know this isn't my original recipe, but I'm happier with this one than my previous one. Small confession... I tend to bake a lot. When I look at the list of recipes I've created, there are far more cakes, breads, and muffins than I'd realized. I like to take a recipe and play options with it. Small changes can make a big difference sometimes. The cardamom, cherries, and pecans really play well together in this muffin. I love this muffin for breakfast, dessert, or a snack. I'll admit that this week was a last minute decision about which recipe to share. I was focused on tax preparation all week. In fact, Loay cooked dinner most of the week, and I made quick, easy breakfasts. So last night when I looked at my recipe list and thought about what I had in the house because I also didn't go to the grocery store this week, this recipe seemed like the best bet. It could serve as today's breakfast and today's recipe! Plus we both find it quite tasty. I made Cardamom Cherry Spelt Muffins to start off the new year. I made them for breakfast on New Year's Day and now I'm sharing them with you. These muffins are incredibly simple to make and so tasty, particularly if you enjoy cardamom. The cardamom and cherry combination really makes me happy! Blueberry Spice Spelt Muffins

Baking can be a challenge for vegans, particularly those of us who try to base our diet around whole foods as much as possible. I've played around with several recipes for muffins, cakes, cupcakes, scones, and other baked goods. In the process I've come up with several iterations of several of these items. For blueberry muffins alone, I've created at least 4 recipes. I'll share them over time because they're different enough to stand on their own. I love baking, and I love creating new twists on old favorites.
